Banana Blueberry Muffins (from my friend Ellen)
-2 large eggs, lightly beaten -2 medium ripe bananas, mashed -1 T unsalted grass fed butter, melted -1.5 cups almond flour -3/4 tsp. Baking soda -1 dash sea salt -1/2 cup fresh blueberries
Directions: 1. Preheat oven to 350. 2. Line muffin pan with muffin liners or spray the pan. 3. Combine eggs, banana, and butter in a medium bowl, set aside. 4. Combine dry ingredients in a medium bowl. Mix well. 5. Combine wet ingredients with dry ingredients. Mix until blended. 6. Add blueberries and stir. 7. Divide batter evenly between prepared muffin cups, approximately 1/4 cup. 8. Bake for 18-22 minutes or until golden brown and toothpick comes out clean. 9. Transfer muffins to rack; cool. Enjoy!!!
